Capri Salad

Ingredients
1 cup ripe cherry tomatoes100 grams part-skim Mozzarella cheese1 small bunch basil, chopped into strips1 tsp olive oildash salt and pepper to taste
Directions
Wash tomatoes. Cut mozzarella into small pieces or use "bocconcini" - small balls of mozzarella. In a glass bowl, mix together all ingredients, tossing lightly. Salt and pepper may be added when mixing or offered at the table.

Makes 2 side-dish servings.
