Green Papaya Salad

.25 tsp Sea Salt 1 T Peanuts, dry-roasted 1-2 Thai Bird or Serrano Peppers .5 tsp coconut sugar1 tbsp Dried Shrimp (optional)2 T Lime Juice 2 T Fish Sauce 8 Cherry Tomatoes, halved6 cups Green Papaya - shredded (about 1 small fruit)
In mortar and pestle or blender, blend or pound garlic, salt, peanuts, chilies, sugar and shrimp (if using) into paste. Transfer to large bowl and add lime juice and fish sauce.
Peel and shred papaya, discarding pulp and seeds. Toss with dressing and halved tomatoes.
Serve with lettuce or cabbage and protein of choice for a full meal.
