Ingredients
2 lbs halibut1 lb shrimp8 oz scallops10 oz salmon1 lb lobster1 lb fennel8 oz shallots3 bay leaves1 tsp grated orange rind1 tbls fennel feathers
Directions
Chop shallots and fennel, saute until shallots begin to brown; add wine to stir in the tasty bits from the pan, add tomatoes, saffron and bay leaves simmer for 15 minutes; add fish and bring back to boil; simmer for further 15 minutes; stir in orange rind and fennel feathers; serve
