3 Tablespoons olive oil1 1/2 cup chopped onions3 cloves garlic, chopped3 cups zuchchini3 cup yellow or summer squashor 3 cup frozen mixed vegetables3 cups diced cooked chicken or (3) 5 oz cans chicken or turkey,2 cans (14 oz) diced tomatoes3 cans (14 0z) seasoned chicken broth6 cups fresh baby spinach or 3 cup frozen chopped spinachseasoning basil, chili powder or seasoning of your choice.
In a large sauce pan over medium heat, cook onions and garlic until transslucent and becoming golden. Raise heat to high, and add both types of Squash. Season with basil and chili powder to your taste. Cook until tender then add chicken tomatoes and chicken broth, bring to a boil, reduce heat and simmer 10 minutes. Add 6 cups of fresh spinach or 3 cups frozen chopped spinach. cook just until spinach wiltes. Makes 6 servings.

I've made this several times & absolutely love it. Great way to get protein. I love spinach but I can't have it because I'm hypothyroid so I sub lots of squash,zuccini, mushroom, green beans and carrots. I even added Nopal (cactus pad) to the soup. I also use real chicken instead of canned. Yummy TY - 11/17/12
