Swiss Chard and Vegetable Soup

Ingredients
I medium Red Onion chopped 1/2 of a Green Pepper chopped1/2 of a Red Pepper8-12 Baby Carrots chopped2 stalks Celery chopped8 Garlic cloves, choppedI medium Red Onion chopped 6 cups Fat Free Broth 2 cups Water2 cups Black Beans3 cups Kale chopped1 head Broccoli chopped and trimmed
Directions
Spray heavy dutch oven with olive oil or cooking spray over medium heat.
Saute onion, peppers, carrots and celery until softened and golden (about 10 minutes).
Add garlic and saute for 30 seconds.
Add broth, beans and water.
Simmer 30 minutes.
Add broccoli and swiss chard and cook for 20 minutes more.
Salt and pepper to taste.
Makes about 6 servings of thick, stew-like soup.
