4 serving Barilla Farfalle (BowTie) pasta (2 oz. / 56gr) 32 tbsp Basil 2 tbsp Olive Oil 0.5 tsp Salt 0.25 tsp Pepper, black 1 clove Garlic 8 oz Tomato, grape (3oz = appro 12 tomatoes) 1 cup Tomatoes - sm cherry tomatoes 3 oz Mozzarella Cheese, whole milk 1 oz Romano Cheese
Cook pasta omitting salt and fat. Drain and place in large bowl.
Combine 2 cups fresh basil, olive oil, kosher salt, black pepper, garlic clove and 2 teaspoons grated lemon rind in food processor. Process until smooth. Add basil mixture, fresh mozzarella cut into half inch cubes and yellow and red halved tomatoes to bowl of pasta. Toss. Add grated Romano cheese.
