Ingredients
1.5 cup Semolina, unenriched 2 medium whole (2-3/5" dia) Red Ripe Tomatoes 1.5 cup, sliced Cucumber (peeled) 3 cup, sliced Zucchini 1 cup cilantro (fresh) (by MINDTHEGAP7) 2 tbsp Olive Oil 2 serving Lemon, fresh squeezed, juice of one whole lemon
Directions
1.Heat one cup of water, add it to semolina, let it sit for 5 minutes, stir into.
2. Chop all vegetables, mix them together, add salt & pepper to taste...and a pinch of cumin
3. when semolina is cooler, add it to the vegetables, mix it together.
Serve cold.
