Low Carb chicken Schnitzel

Ingredients
1 tbsp Extra Virgin Olive Oil 0.25 tsp Garlic powder 0.5 cup Almond Meal/Flour 14g Pork Rinds(Baken-ets Fried Pork Skins)(9 pieces)4 oz boneless ,skinless chicken breast1 tbsp Butter, salted 1 large Egg, fresh, whole, raw 1 tbsp dry parsley(optional)pinch salt & pepper!/4 tsp cayenne powder for extra kick (optional)
Directions
Cut chicken horizontally to make 2 pieces, season with salt and pepper. In bowl crush pork rinds to resemble crumbs, add almond flour, garlic, dry parsley and cayenne mix to blend together. In another bowl beat egg. Take 1 piece of chicken and dip it into the egg then in dry mixture ( for double crunch do it twice ) then continue with other piece. Heat olive oil and butter in frying pan, when hot place chicken in pan. Cook 5 minutes each side. Serve hot with veggies.
