Tita's Spicy Slow Cooker White Beans and Bacon

2.5 cups dry white beans4 cups salt free chicken stock2 cups of water1 cup, chopped Carrots, raw 1 cup, chopped Onions, raw 1 stalk, large Celery, raw 1 cup, chopped Peppers, sweet, red, fresh 4 slices Canadian Bacon 4 slices regular bacon, diced and fried1˝ tablespoons of mixed vegetable bullion w/ salt 2 tsp Fresh Ground Black Pepper4 tsp Cajun's Choice Blackened Seasoning (or to taste)1 tsp Salt
Soak beans overnight in cold water. Drain the water off. Dice the Canadian Bacon and all the vegetables. Add all the remaining ingredients to the slow cooker, except for the cooked bacon slices, vegetable bullion, and salt. Set slow cooker to low and cook about 5-6 hours. Add the cooked diced bacon, vegetable bullion and salt. Simmer for another hour. You can cook this on high when pressed for time, and your cooking time will be cut in half.
For a little extra punch, add a diced chili pepper and a medium diced tomato.
