Fudge Cookie Bites

¾ cup sugar⅓ cup unsweetened cocoa powder¼ cup coconut oil, very soft (mine was semi-melted)4 oz (by weight) unsweetened applesauce1 teaspoon vanilla extract1¾ cups gluten free flour1 teaspoon baking powder¼ teaspoon saltyour favorite sprinkles
Heat oven to 375F and line two cookie sheets with parchment paper or silpat. Set aside.
In a large bowl, beat together the sugar, cocoa, coconut oil, applesauce and vanilla.
Add the flour, baking powder and salt and beat until well combined.
Pour your sprinkles into a shallow bowl.
Use a small cookie scoop or your hands to shape the dough into approximately 30 small balls (marble size) and roll in sprinkles to fully coat.
Place on the prepared baking sheets, approximately 1" apart.
Bake for 8 minutes, until set.
Remove from oven, allow to cool for a minute on the baking sheet, then transfer to a wire rack to cool completely.
