3.0 large egg1.0 cup vegetable oil3.0 tsp vanilla extract2 1/4 cup sugar2.0 cup, shredded zucchini3.0 cup flour1.0 tsp salt1.0 tsp baking powder0.25 tsp baking soda1.0 tbsp cinnamon, ground1.0 pint Blueberries, fresh
Preheat oven to 350 degrees
Lightly grease 4 mini loaf pans.
In a large bowl, beat together eggs, oil, vanilla & sugar.
Fold in zucchini.
Beat in the flour, salt, baking powder, baking soda, and cinnamon.
Gently fold in blueberries.
Transfer batter to the mini loaf pans.
Bake 50 minutes or until a tester comes out clean.
Cool 20 minutes in pans, then turn out onto wire racks to cool completely.
Serving Size: 32 1 inch slices, 8 slices per loaf
