Cod Fritters

Ingredients
4 cod fillets, poached and flaked2 lg eggs, beaten1 tbsp parsley1/4 cup seasoned bread crumbstobasco sauce1 cup saltines,crushed
Directions
In large bowl, stir together cod, eggs, parsley, bread crumbs, tobasco, salt and pepper. Form mixture into patties, and coat with saltines. Fry in veggie oil 2-3 minutes on each side, or until golden. Transfer fritters to paper towels to drain. Serve warm with tartar sauce.

    I made this and added a little cornjmeal and bread them with crushed corn flakes. This was great!!! I'd make it again although it was a little messy it was worth it. - 8/9/07
