Fillet Mignon Au Poivre

4 fillets, 1 1/2 in thick4 tsp butter, divided1yellow bell pepper, sliced thin1 red bell pepper, sliced thin1 green bell pepper, sliced thin1 1/2 tsp black peppercorns, cracked2 tsp brandySalt Pepper1 tsp olive oil1/2 c heavy cream
Heat 2 tsp butter in skillet and saute pepper slices til tender. Remove and set aside.
Sprinkle fillets with salt & press peppercorns into both sides. Heat 1 tsp butter and olive oil in skillet and brown steaks for 5 min on each side. Remove steaks and keep warm.
Deglaze pan with brandy. Stir in cream and bring to boil til slightly reduced. Add remaining butter in pieces and season with salt and pepper. Place Pepper slices on serving dish, and arrange steaks on top. Pour sauce over steaks.
