Spicy Vegan Jambalaya

3 tbsp Extra Virgin Olive Oil 1 medium (2-1/2" dia) Onions, raw 3 clove Garlic 4 stalk, large (11"-12" long) Celery, raw 1 pepper Serrano Peppers 2 medium whole (2-3/5" dia) Red Ripe Tomatoes 2 cup Brown Rice, medium grain 4 cup Imagine Organic Vegetable Stock (by HEALTHIERANN66) 1 tsp Paprika 2 tsp Hot Pepper Sauce
1. Heat oil in a large skillet or saucepan.
2. Add onion, garlic, celery, and Serrano pepper to oil and sauté until onions are translucent, about 3 minutes.
3. Add tomatoes and cook additional minute or two to soften them up.
4. Add rice, vegetable stock, paprika, hot sauce, salt, and pepper to pan and stir to combine. Cover and bring mixture to a simmer. Let cook for 20-40 minutes, until the rice has absorbed all the liquid and cooked through.
