Celeriac Soup

Ingredients
18 ounces celeriac4 ounces sliced mushroom12 ounces low sodium broth1 1/2 cup chopped onion1 tsp olive oil1/2 cup dry lentils
Directions
Peel and slice up celeriac. Cover with water and boil till soft. Throw into blender (don't drain) and puree. Heat up olive oil and saute mushrooms and onions. When softened, add celeriac and broth. Add lentils. Let simmer until lentils are soft, adding extra water if necessary. Makes 6 - 1 cup servings.
