Easy Layered Salad

1 cup couscous, dry1 can 19 oz lentils, drained, rinsed1/4 cup chopped fresh cilantro1/2 tsp salt1 1/2 cup boiling water4 carrots, grated4 radishes, halved & sliced2 cups cauliflower, chopped2 stalks celery, sliced1 sweet red pepper, chopped1/2 cup vegetable oil1 1/2 Tbsp chili powder1 1/2 Tbsp water3 tsp sugar1 Tbsp lime rind, grated1/2 cup lime juice3/4 tsp salt1 1/2 cup English cucumber, chopped1 cups tomatoes, chopped1/2 cup feta cheese, crumbled1 green onion, chopped
Makes 8 servings:
Combine couscous and 1 1/2 cup boiling water - let stand 5 minutes, fluff with fork and add lentils, cilantro and salt. Put in bottom of large glass bowl.
Layer over couscous - carrots, radishes, cauliflower, celery, red pepper.
Combine as a dressing: oil, chili powder, 1 1/2 Tbsp water, sugar, lime rind, lime juice and 3/4 tsp salt. Shake and drizzle over veggies.
Layer on top with: cucumber, tomatoes, feta cheese and green onion.
Keeps well and makes a beautiful presentation.
