Ingredients
4.0 serving Tomatoes, Roma, Fresh, 1 Med chopped1.0 cup Onion Raw (1/4 cup, 40g or 1.4oz), chopped1.0 serving 1 Med. Green Bell Pepper, chopped1.5 tbsp Extra Virgin Olive Oil4.0 large Egg, fresh, whole, raw2.0 medium (2-1/4" to 3-1/4" dia.) Potatoes, chopped
Directions
Cut potatoes, onion, peppers & tomatoes up into chunks. Beat eggs & set aside. Heat, in a pan, the olive oil on medium high heat & place the onions, peppers & potatoes to cook till half way done. Add the tomatoes & finish cooking till mixture is done, then add eggs until eggs are set.
