Slow Cooker Enchiladas

Ingredients
1 lb extra lean ground beef10 (6 inch) corn tortillas1 pkg taco seasoning1 1/4 cup water1 jar (approx, 12 oz) taco sauce1 can reduced fat condensed cream of mushroom soup1 can reduced fat condense cream of chicken soup3 cups reduced fat shredded cheese (cheddar, colby, mexican blend, etc.)
Directions
Cook beef and add taco seasoning and water. Simmer 15 minutes. In a bowl mix taco sauce, soups, and most of cheese (reserve 1/2 cup). Place layer of tortillas on bottom of slow cooker. Layer of beef over that, then a soup/cheese layer. Repeat layers, ending with tortillas on top. Top with remaining cheese. Cook 1 hour on high.

    This turned out delicious. My crock pot isn't big enough for this recipe, so I put it in a 9x13 pan and baked at 300 for 1 hr. - 8/12/11

    I made this but substituted sour cream for the can of mushroom soup, just 1 cup. I only used 2 cups cheese. My husband and daughter loved it! I ate less than 1/6 as it's not exactly low calorie - but will definitely make again! - 10/7/09
