Buffalo chicken zucchini boats

1/2 lbChicken - Extra Lean Ground chicken1.0 cup, chopped Onions, raw1.0 serving Yellow Bell Pepper, 1 serving equals 1.8 oz or about 10 strips3.0 oz Mozzarella Cheese, part skim milk2 tsp garlic powderSalt and pepper to taste4 tbsp Frank's Red Hot or hot sauce of your choice
Cut zucchini in half lengthwise and using a spoon, hollow out each boat. Chop pepper and onion and cook in nonstick pan with ground chicken and the zucchini you scraped out. Add seasonings and hot sauce. Simmer for 5 minutes. Fill "boats" and top with mozzarella. Bake for 25 minutes in 400 degree oven.
