Sloppy Joes for the Trail
- Number of Servings: 4
Ingredients
Directions
16 oz 93% Lean Ground Beef 1 medium (2-1/2" dia) Onions, raw 1 large (2-1/4 per lb, approx 3- Sweet peppers (bell) 1 tsp Garlic powder 16 tbsp Ketchup, Heinz 6 tsp unpacked Brown Sugar
At home:
Dice the bell pepper (I prefer red) and the (medium or large) onion. Dice small so that it rehydrates more quickly.
Cook the beef, onion and pepper in a skillet. Break the ground beef into fairly small pieces (approx. 1/2") as its cooking so that rehydration is easier.
Drain off the liquid.
Stir in remaining ingredients, cover, and simmer for 15 minutes.
Divide into equal portions. If you plan to eat any immediately, serve that part. Spread each remaining portion evenly on dehydrator trays, and dehydrate at 135 for 8-10 hours.
After it has dried, cool and put each serving in a separate zip lock bag (If freezer bag cooking, use a name brand 1 quart freezer bag).
On the Trail:
Freezer bag method: Pour enough boiling water into the freezer bag to just cover the deyhydrated sloppy joe plus 1/4 inch. (more can be added if needed). Seal bag and put in a cozy. Let sit until rehydrated. Pour mixture onto a tortilla or other bread and enjoy.
Pot Method: Pour the sloppy joe mix into the pot. Add enough water to cover plus 1/4 inch. (more can be added if needed). Bring to a boil, turn off stove, then let it sit covered until rehydrated. (Put pot in pot cozy if you have one). Scoop mixture onto desired bread and serve.
Serving Size: Makes 4 large servings for a tortilla or 8 smaller ones for sandwhich rounds
