Sweet potato pancake

Ingredients
2 cup Flour - Gold medal all purpose flour .25 cup Granulated Sugar 2 tsp Baking Powder .5 tsp Baking Soda 3 large Egg, fresh, whole, raw 2 cup Buttermilk, lowfat 1.5 cup, cubes Sweet potato 2 tbsp Coconut Oil .5 tsp Vanilla Extract
Directions
Combine wet ingredients.
Combine dry ingredients.
Add the dry to the wet ingredients and whisk to get batter smooth. Heat griddle and spray with cooking spray. Use a ladle to drop batter on the griddle. Flip once.
