Garlic Mashed Potatoes

Ingredients
8 cups diced potatoes1 cup chicken broth (reduced sodium)1/2 tsp salt1 Tbsp. unsalted butter6 Tbsp light sour cream1 head garlicpepper to taste
Directions
Roast a head of garlic wrapped in foil at 350 for 45 min. Using kitchen shears cut of the top of the garlic and squeeze out the cloves into a large bowl. Boil potatoes until just tender and drain, reserving 1 cup of cooking water. Add the potatoes to the bowl and mash with the broth, sour cream and salt, adding the reserved water if needed to get the texture you like. Add pepper to taste.
