Spagetti Sauce

Ingredients
2 tbsp. Olive Oil 1 cup, chopped Green Peppers (bell peppers) 1 cup, chopped Peppers, sweet, red, fresh 1.5 cup, chopped Onions, raw 3 can (6 oz) Tomato Paste 7 cup, chopped or sliced Red Ripe Tomatoes 1 can (29 oz) (401 x 411) Pureed Tomatoes 1 tbsp Basil 1 tsp Oregano, ground 3 tsp McCormick Italian Seasoning (by MRULAND) 1 serving Hormel Pepperoni (15 Pepperoni)
Directions
1. Remove tomato skins ( I pour boiling water over the tomatoes in a bowl and then when the skins split, I then submerge the tomatoes one by one into ice water, remove skin.) Coursely chop the tomatoes and place into a large bowl.
2. Heat olive oil in Dutch oven. Add onions, and peppers. Sauté till soft. Add the tomato paste and heat thourouly . Be careful not to burn it. Add pepperoni. At this time I add my spices. (The tbsp. of basil may be a bit much for some, but I like basil.) Please feel free to add spices to your taste!
3. Add the chopped tomatoes to your paste and veggies mixture. I then add a can of tomato puree. Mix well, and simmer for 2-3 hours.
** I then shut off the stove and allow the sauce to cool. This helps to thicken the sauce. I usually serve the next day, because the flavors merge and the sauce thickens. If serving the same day, after the 2-3 hour cooling feel free to cook up the sauce for dinner.
** If you prefer to cook it in the crock pot, follow stps 1-3 and add to your crock pot cook on low for 8 hours or high for about 4-5 hours remembering to stir frequently when using (high) on your crock pot.
**Now for the naughty stuff! If you like I fry a pound of sweet Italian sausage with a pound of hamburger (80%-20%). Drain well and add to your sauce. Or if you prefer, make your meatballs and add to your sauce. **The naughty stuff is not figured in the caloric value!!
****This sauce is freezable. I freeze 2 cups in quart size freezer bags, remove air. Lay bags flat on a cookie sheet and freeze. I store several of these bags in a large square freezer container. * The reason why I freeze in 2 cup packages is I will take out what I need to for baked Ziti or other casseroles that call for spaghetti sauce. If you don't have fresh tomatoes you can use the following equivalents: 3-- 6oz. cans of tomato paste, 2 -28oz cans of crushed (I prefer) or diced tomatoes, and 1-29oz can of tomato puree. Follow same directions. Hope you find this helpful.
