Sweet Potato Turkey Frittata

454 grams Ground Turkey 2 tbsp Extra Light Olive Oil 1 cup, chopped Onions, raw 2 cup Bell peppers (Green, Red, Yellow, Orange) 2 cup Raw Sweet Potatoe (by PEARLAP) 1 serving Fresh Green Beans (1 cup) 8 medium Egg, fresh, whole, raw 2 tsp Salt 2 tsp Pepper, black 1 tsp Oregano, ground
Preheat oven to 350.
Brown the ground turkey in 1 tbsp olive oil
Heat 1 tbsp olive oil in large skillet and cook the onion, peppers till soft. Then add in the sweet potato with seasonings. Cover and cook for another 5-8 minutes until sweet potato is tender. Add the ground turkey and beaten eggs to this mixture and stir everything together. Transfer to 2, 8 inch square baking dishes and bake for 10-12 minutes or until the eggs are nicely set.
Garnish as you please.
