Banana Buckwheat Oat Pancakes

Ingredients
.33 cup Oats (ground to equal .25 cups coarse flour)0.25 cup Buckwheat Flour.25 cup Chobani 2% Plain Greek Yogurt.25 cup Milk, 3.25%1 large Egg Yolk 0.25 tsp Xanthan Gum.25 tsp Baking Soda .5 tsp Baking Powder .5 tsp Vanilla Extract .25 tsp Cinnamon1 tbsp Honey 1 medium Banana, chopped
Directions
Mix all ingredients thoroughly.
Drop into oiled pan over medium-low heat, and cook about 2 minutes per side.
Serve with extra (or reserved) bananas and honey for garnish, or serve dry for a meal on the run!

Makes 8, 3-inch pancakes (serves Mom & little kid)
