Red lentil and tomato soup

Ingredients
3 tbsp Red Lentils 1 can Canned Diced Tomatoes 1 medium Onions 1 stalk Celery 1 tsp ground CuminOlive Oil cooking spray Salt to taste
Directions
Spray heated frypan with olive oil spray
Cook one chopped onion and diced celery with 1 teaspoon of cumin for about five minutes, or until softened over medium heat
Add can of diced tomatoes and 3 tablespoons of washed red lentils
Season to taste with salt and/or pepper
Simmer covered for about 20 minutes or until lentils are soft

Serving Size: Makes 2 cups
