Smoked Tofu and Bean Burgers

Ingredients
1 medium onion, peeled and quartered1 plump garlic clove, peeled1 medium carrot, peeled and grated 420g can red kidney beans, drained and rinsed 220g smoked tofu, drained1 Tbsp sesame seeds 1 small bunch parsley (about 20g)2 tsp organic vegetable bouillon powder
Directions
Preheat the oven to 220C/Gas Mark 7. Line a large baking tray with baking parchment.

Place all the ingredients in a food processor and blend for roughly 6-8 seconds, until well mixed but still retaining some texture. I don’t own a food processor so I mashed the tofu and beans with a potato masher and chopped the other ingredients up really fine. Works well.

Form the mixture into six equal ball shapes and place on the baking tray. Press with fingertips to make a burger shape.

Bake for 25 minutes until light golden brown. Remove from oven and leave to firm up on the tray for 3-4 minutes. Serve with a crisp green salad.

    I HAVEN'T USED MUCH TOFU BUT I MADE A LASAGNA WITH IT AND IT WAS GOOD AND YOU COULDN'T TELL IT WAS TOFU. ABOUT THIS RECIPE I DON'T KNOW MUCH ABOUT GRAMS SO HOW MUCH IS 220 GRAMS. I CAN FIGURE OUT THE CAN. PHYL32 - 10/8/12
