Ingredients
1 eggplant, peeled (yield from 1 Eggplant, fresh 9 tbsp Break Free 100% Liquid Egg Whites Kroger 1 1tsp Canola Oil 20 spear, medium (5-1/4" to 7" lo Asparagus, fresh 6 tsp Garlic powder 3 serving Hot Sauce, Sriracha Hot Chili Sauce 1 tsp (5g) 0.25 cup Home made bread crumbs (by MADDY_AVENA) 2 tsp Red Pepper Powder (Corse) - Wang (by SNOWAMRITA)
Directions
Preheat oven to 350. wash peel slice eggplant 3/8 in. thick, on aluminum foil sheet spread 1T olive oil on top of baking sheet pan.
Mix egg whites, sriracha, garlic powder, red pepper. Dip sliced eggplant and asparagus in egg whites and bread crumbs. Place on oiled foil. Bake on 350 for 15 mins. Use egg whites and crumbs in a separate omelet.
