rhubarb muffins

Ingredients
For the Rhubarb I diced a cup and sprinkled it with one tsp cinnamon and 1/2 tsp of ginger.I also sprinkled about a TBS of raw unrefined sugar on it and let this sit while I mixed the other ingredients.1 1/2 c whole wheat flour1 1/4 tsp baking powder1/2 tsp baking soda1 tsp cinnamon1/4 tsp nutmeg1 tsp vanilla 2 egg whites 1/4 c applesauce (unsweetened)1/4 c packed brown sugar
Directions
Preheat oven to 350

mix dry ingredients
I beat the eggs and then added the vanilla, sugar and applesauce.
Then beat together.
Add to dry mixture and then add rhubarb.
bake for 30-40 minutes

makes 6 large muffins

I doubled the recipie and made 18 smaller muffins.
You can also add apples to the rhubarb mixture.
