Fancy-Ass Mediterranean Cucumber Sandwiches

1/4 cucumber with skin1 oz crumbled feta cheese2 oz hummus (I prefer Sabra Roasted Red Pepper hummus myself)<1/4 red oniona dash of black pepper
1. Scrub cucumber skin if waxed or nasty.
2. Slice cucumber into pieces about as thick as a nickel. You should end up with about 10 slices.
3. Spread a small dollop of hummus on 5 of the slices. Set aside the other 5.
4. Slice red onion as thin as you can. Cut into bite-sized pieces if necessary. Lay red onion on top of hummus on cucumber slices.
5. Sprinkle hummus-coated slices with feta cheese and a little black pepper.
6. Top each decorated slice with a fresh cucumber slice to make sandwiches. Serve chilled to fabulous people.
