4 cups cooked mashed butternut squash2 tbsp granulated sugar2 large eggs1 cup 1% milk1/3 cup pecans1/3 cup packed brown sugar2 tbsp flour2 tbsp light margarine
Cook 2 butternut squash on cookie sheet in 350 degree oven for 1 hour. Allow to cool. Cut in half and take out seeds. Spoon out the rest of the squash into a bowl. Combine granulated sugar, 2 beaten eggs and milk and mash altogether. Spray casserole dish with Pam so it doesn't stick.. In separate bowl combine pecans, brown sugar, flour and mix together. Melt margarine and add slowly to the mixture. Sprinkle over mashed butternut squash.
Bake in 325 degree oven for 1 hour.
