Cinnamon Sourdough Crumpets

Ingredients
1 cup (unfed) sourdough starter1 tsp sugar1/2 tsp salt1/2 tsp baking soda1/2 tsp cinnamon
Directions
Mix all ingredients together in a medium bowl.
Heat a dry nonstick skillet over medium heat.
Drop dollops of batter in, and cook until tops are set.
Serve immediately or cool and freeze in plastic bags.

    This recipe (without the cinnamon) is also on the King Arthur Flour site. I've tried it and it's quite good. I gave it only 4 stars because you neglected to state that you need to cook crumpets (also known as English muffins) in rings. - 7/26/18

    I made these three times now - but without the cinnamon. I thought it was a good way to use sourdough starter rather than throwing it away.

    My sourdough starter is rye flour based, so I found making this into crumpets a bit 'too' healthy or substantial. - 9/25/08
