Mexican Lasagna

Ingredients
10 Small Corn tortillas1/2 package Ground turkey, brownedone large onion, diced1.5 red bell peppers, diced1 can fat free refried beans1 cup fat free yogurt cheese (let yogurt drain overnight in the fridge in a coffee filter suspended in a strainer to make the yogurt cheese)2 ounces cheddar cheese1 jar enchilada sauce
Directions
Layer tortillas in a pyrex baking dish. Spread beans over, then sprinkle with peppers and onions. Layer more tortillas, spread with yogurt cheese, then sprinkle with peppers and onions. Repeat with layers of ground turkey, and any remaining beans and yogurt cheese. Season with cumin and chile powder. Pour enchilada sauce over final layer of tortillas, then sprinkle with shredded cheddar and bake at 350 degrees for 30 minutes.
