Coconut Pineappe Coleslaw

Ingredients
1.5 Tbsp Coconut Oil - Nutiva Organic Extra-Virgin Coconut Oil 3/4 cup Coconut Flakes, unsweetened1 small (5-1/2" long) Carrots, raw 6 cup, chopped Cabbage, fresh 2/3 cup Mayo Light Mayonnaise (Mayo) .5 serving Stevia, packet 1 tsp Celery seed 1 dash Salt 1 cup Dole Pineapple Tidbits 100% Pineapple juice, drained2 Tablespoon Heinz White Wine Vinegar
Directions
Drain pineapple, do not use juice. 6 cups of cabbage, I used 1 one cup red cabbage & 5 cups reg. one small carrot shredded, 3/4 cup coconut flakes unsweetened, 1 1/2 T coconut oil organic, 2/3 cups lite mayo, 1/2 pkg truvia, 1 tsp. celery seed, 2 Tablespoon of white vinegar, & a pinch of salt. Can add walnuts if you like them but add on calories to recipe,
