Whole Wheat Cracked Wheat Bread

1.5 cup bulgur/cracked whole wheat3 tbsp Canola Oil 0.25 cup Molasses 1 tbsp Salt 3.75 cup Water, divided0.75 tsp Granulated Sugar 2 Tbsp Active Dry Yeast 6 cup Whole Wheat Flour 4 cup White, bread Flour3/8 cup Instant Nonfat Dry Milk Powdered
Combine bulgur, oil, molasses, salt, and 2 c hot water in mixer bowl. Allow to soak ~15 min. Meanwhile, add sugar and yeast to 3/4c warm water. Allow to proof. Add remaining cup water to bring temperature of mixture to ~105°F. Add wheat flour, powdered milk,and yeast mixture; mix. Add white flour. Knead well. Remove dough, turn into greased bowl, and allow to rise in warm place until doubled. Turn out and shape into 3 balls. Cover with plastic wrap and allow to rest ~5 min. Shape into loaves and place into greased 9x5 pans. Spray tops. Allow to rise in warm place until doubled. Meanwhile, preheat oven to 350°. Bake 15 min, rotate pans, and bake another 15 min or until well-browned. Turn out onto wire rack.
