Butternut soup, non dairy

Ingredients
1 tbsp Olive Oil 1 cup, chopped Onions, raw 1 cup, chopped Carrots, raw 3 cup, cubes Butternut Squash 4 cup (8 fl oz) Chicken Broth 2 cup Rice Dream Original rice milk 2 tsp Cumin seed 1 tsp Curry powder
Directions
Saute onions in oil. Add carrots and squash, simmer 5 minutes. Add broth and rice milk, cumin, curry powder, salt and pepper to taste. Cook on med-low until all veggies are soft [10-15 mins]. Puree soup with traditional or submersible blender. Simmer 10 minutes. You can add more liquid if soup seems too thick.
