Quick and Easy Salmon Cakes

2 Chicken of the Sea, Pink Salmon Chunk style in water or in sealed packet1 c. plain bread crumbs2 lg. eggs, beaten1/4 c. chopped onions (optional)1 scallion, chopped1 tsp. dried parsley1 tbsp. Kosher Salt, to taste1 tbsp. Black Pepper, to taste
Form into balls and press into frying pan to form about 1 inch in diameter cakes. Brown each side to liking and serve. You can serve them hot or refrigerate and serve cold. Either way they are great. About 3-4 cakes per serving depending on thickness.
