Ingredients
1 cup 100% pure canned pumpkin 1 cup applesauce, unsweetened 1/2 cup unpacked brown sugar 1/2 cup granulated sugar 1/4 cup egg white (about 2)1 tsp vanilla extract 2 cup whole wheat flour 1 cup Quaker Oats 100% Whole Grain Quaker Oats - Quick 1 tsp baking soda 1 tsp pumpkin pie spice 1 cup Semisweet Chocolate Chips
Directions
Preheat oven to 350 degrees.
In a bowl, blend applesauce and sugars until light and fluffy. Beat in egg whites and vanilla. Combine the flour, oats, baking soda and pumpkin spice; stir into sugar mixture alternately with pumpkin. Fold in chocolate chips.
Drop by tablespoonfuls onto baking sheets lined with parchment paper or silicone. Bake at 350° for 12-13 minutes or until lightly browned. Remove to wire racks to cool.
