Greek Style Cucumber Tomato Onion Salad

Ingredients
2.0 tbsp Extra Virgin Olive Oil1.0 tbsp (C) Vinegar, Red Wine (Gr Value)2.0 medium Cucumber (peeled)4.0 tomato Red Ripe Tomatoes0.5 cup Red Onion Raw (1/4 cup, 40g or 1.4oz)0.5 cup, crumbled Feta CheeseSalt and pepper to taste
Directions
Peel and cut cucumber. Chop tomatoes and red onion. Mix olive oil, red wine vinegar, salt, and pepper. Pour over vegetables and toss. Add crumbled feta and gently toss. Be sure to stir before serving.

    I will add more salt and pepper next time, but I enjoyed this as a side. Half a serving is probably a side dish size. My lunch tomorrow will be a full serving. - 10/9/17
