Simple Green Coconut Curry

5 cup Coconut milk (light) 16 ounces Chicken Breast (cooked), no skin, roasted 1.5 sweetpotato, 5" long Sweet potato 1 cup, chopped or diced Broccoli, fresh 0.5 cup Bell peppers (Green, Red, Yellow, Orange) 1 tbsp Coconut Oil 4 Tbsp Green Curry Paste
Heat coconut oil and sear chicken, then remove to a plate. To the same pot add the sweet potatoes and brown a little. Add curry paste and toast for a few seconds before adding coconut milk. Simmer sweet potatoes in milk and add the other vegetables. Summer together for several minutes until potatoes are tender and broccoli is bright green. Return chicken to pot and heat through. Season with salt and pepper to taste.
