20 oz Ground beef, extra lean (15% fat) pan broiled .5 cup, chopped Onions, raw 3 clove Garlic 3 serving Cabbage (1 cup, shredded) 3 cup green giant cauliflower rice 1.5 cup Trader Joes Organic Diced & No Salt Tomatoes (by SHELBSYD) 1 cup rotels no salt diced tomatoes & chilies (by AUDACITER) 2 tsp Cavendar Greek Seasoning (by CHEMRULZ)
Saute chopped onion in a TBSP Olive oil. Add garlic, cook until wilted. Put in crock pot, add cabbage mix (I used a bag of coleslaw mix, veggies only that included cabbage, onion and green pepper - next time I will shred some lettuce, I like bigger pieces of cabbage), a bag of cauliflower rice, tomatoes and seasoning. (I love Greek seasoning, you could use an Italian seasoning) Cook on low for 8 hours (I cooked on high for two and then low for 4). Serve with mashed potatoes.
