Ingredients
4.0 tbsp Butter, salted0.5 tsp Cinnamon, ground3.0 tsp Garlic1.0 cup, chopped Onions, raw2.0 squash (4 inch dia) Squash, winter, acorn, raw1.0 cup, chopped Walnuts1.0 cup (8 fl oz) Water, tap1.0 tbsp Honey4.0 oz Tyson boneless, skinless chicken breast2.0 tbsp Extra Virgin Olive Oil1.0 serving Granny smith apple - 1 med. apple4.0 cup Uncle Bens Whole Grain Medley Quinoa Brown rice2.0 serving Herb Ox Sodium Free Chicken Bouillon Instant Broth & Seasoning
Directions
Saute onions, apples, chicken in olive oil until cooked. Add walnuts, half the butter, bouillon, water, honey, cinnamon, cooked rice and quinoa. Continue to cook and stir all ingredient until water is almost all absorbed. While you are doing the above, poke holes in your squash place them in a glass dish with an inch of water on bottom. Cook in microwave for 10 mins. Carefully remove from microwave and dish. Cut squash in half, and remove seeds. Place squash back in glass dish with water for another 5 to 10 minutes or until squash gets soft. Now transfer squash halves to a cookie sheet with sides. Add the other half of butter to the squash, and then spoon in the stuffing mix to over flowing. Bake at 400 for 20 to 25 minutes. Remove from oven let cool a few minutes then serve. Serving Size: Makes 4 servings
