1 serving Chocolate Avocado Cream Pie 3 avocados ( If you want less fat, try Florida variety)1 can coconut milk or coconut cream3/4 cup cocoa powder1/2 cup honey or sugar1 tablespoon vanilla extract1 pie crust (graham cracker, chocolate, or regular - precooked)
Whip the coconut milk/cream with an electric mixer or food processor for a few seconds, until smooth and creamy. Gently fold in honey/sugar and set in fridge.
Pulse avocados or blend on high with table top or hand mixer for five minutes.
Add to mixer avocados, cocoa powder, vanilla. Blend until smooth and creamy - pudding consistency.
In a large bowl, gently fold together avocado chocolate and coconut whipped cream. Pour into your prepared pie crust, cover, and refrigerate for 3 hours to set (or freeze for 1 hour if you want to eat it right away). Store leftovers covered in the fridge.
