Eggface's Almost No Bake Lemon Cheesecake Bites

Ingredients
Almond crust:3/4 cup Bob's Red Mill Almond Meal1.5 scoops Unjury Vanilla protein powder1 tbsp light butter1/2 tsp vanilla extract1.5 tbsp lemon juiceFilling:3/4 cup Polly-O reduced fat ricotta cheese3 oz 1/3 reduced fat Philly Cream Cheese1.5 tbsp dry Jello instant lemon pudding mix (sugar/fat free)1/2 tsp vanilla extractzest of 1 lemon
Directions
Crust:
Grease and line a mini muffin tin with paper liners. Set aside. Mix almond meal, protein powder, melted butter and vanilla together. Press mixture firmly and evenly mini muffin papers (about 3/4 full.) Bake at 350 for 12 minutes or until lightly browned. Remove the crust from the oven and let it cool before adding the filling.

Filling:
Mix filling ingredients together and spoon onto cooled crusts. Top if desired. (Top with strawberries, lemon zest, coconut, whatever you desire!)
