Chicken with Cilantro and Green Onions

Ingredients
2 Chicken Breast, no skin or bone2Tbsp. Oriental Fish SauceLime Juice from 2-3 wdges of lime2 Tbsp. chopped Green Onions2Tbsp. Chopped FRESH cilantro1/2 tsp. Crushed Hot Red Pepper (optional)
Directions
Boil chicken, remove from water to cool saving broth. When cool enough, pull apart/shred chicken into thin strips into a bowl.
Coarsely chop onions and fresh cilantro and to chicken. Add remaining ingredients and 2 TBLS of the broth, stir well.
Can add more or less of any ingredient to taste.
Serve over steamed rice.
