Lite Mussels Marinara - Spicy!

Ingredients
2 lbs. cleaned and sorted mussels1/2 large onion, chopped4 garlic cloves, crushed1 large carrot, shredded1/2 tsp red pepper flakes1/2 cup dry white wine1/2 cup vegetable broth1 bay leafsalt and pepper to taste14 oz diced tomatoes with juice1 tablespoon tomato paste
Directions
Heat a large, nonstick frying pan over medium. Add onion, garlic, carrot and red pepper flakes, saute 5 minutes or until softened and fragrant.
Add wine, bay leaf, salt, pepper, diced tomatoes and tomato paste; bring to a boil and let cook another 5 minutes.
Now add the mussels to the boiling sauce.
Reduce heat to a simmer, cover and cook 5 minutes.
Discard any mussels that haven't opened.
Serve immediately.
