1/2 tsp Pepper, black Salt (to taste)1/4 cup tomatoes, chopped1/4 block Tofu, firm 1/2 tbsp Garlic Power 1 tsp ground turmeric 1/4 cup Red Onion, chopped 1/4 Avocado, chopped1 slice whole-grain bread3 cup Baby Spinach
1. Take the tofu and "scramble" in a skillet on med-high heat for four to five minutes while stirring frequently.
2. Add the ground turmeric, black pepper, salt, and garlic powder and stir.
3. Cook for 2 more minutes while stirring frequently, then add the baby spinach and cook for one more minute.
4. Serve a piece of whole grain toast and top scramble with the chopped red onion, avocado, and tomato.
Serving Size: Makes 1 serving
