3 extra large Egg, fresh, whole, raw 75 Portabella Mushrooms 0.33 cup, chopped Onions, raw 0.33 cup, chopped Green Peppers (bell peppers) 0.33 cup, chopped Peppers, sweet, red, fresh 0.33 serving Papa John's Pizza Sauce (1 Tablespoon) 0.25 cup Cheese - Kraft Shredded Cheddar Cheese
Chop all vegetables and set aside, Beat three extra large eggs in a bowl and set aside. Put non stick skillet over medium heat (lightly sprayed with oil if you wish) add the eggs to the skillet, add the veggies spreading evenly over the eggs, once firm enough flip over egg mixture, add salt & pepper to taste, and top with cheese, letting bottom of eggs firm up and cheese to melt. Divide onto two plates, dot with pizza sauce and serve. Tip smoky cheese is delicious for added depth of flavor.
