Cabbage, sausage, potato soup

1 head, small (about 4-1/2" dia) Cabbage, fresh -- chopped 5 medium (2-1/4" to 3-1/4" dia.) Yukon Gold Potatoes -- diced32 oz Hillshire Farm Beef Smoked Sausage -- sliced into rounds3 Leeks, sliced into 1/8 inch rounds (white and light green parts only)6 cup (8 fl oz) Chicken Broth 2 carrot (7-1/2") Carrots -- sliced into rounds1 stalk, large (11"-12" long) Celery -- sliced3 cloves Garlic -- minced1 Bay Leaf 2 tbsp Extra Virgin Olive Oil
1. Brown sausage in large pot or Dutch oven. Remove with slotted spoon and set aside.
2. Add olive oil to remaining sausage grease. Add leeks, carrots, and celery. Saute about 5 minutes.
3. Add cabbage and garlic. Saute another few minutes.
4. Add broth, potatoes, seasonings, and cooked sausage.
5. Simmer until potatoes are tender, appx 20-30 minutes depending on how large you dice the potatoes.
