Rich Pimento Cheese Spread

Ingredients
8 oz sharp white cheddar cheese8 oz extra sharp yellow cheddar cheese7 oz jar pimentos (including juice)1/2 cup mayonnaiseThe full fat gives the flavor to let a little 1 Tbl go a long, long way.
Directions
shred both cheeses
add pimentos and all juice to cheeses
stir in the mayonnaise
Refrigerate for up to a month -0 if it lasts that long

I use a food process to shred, then add the pimentos and mayonnais and pulse until the right consistency - spreadable. That way a 1 Tblsp serving will cover 2 crackers and reduce the calories & sodium.

Makes 32 1 Tablespoon servings
